Summer's in full-swing and I had this sudden craving for BBQ sauce. It can be hard to find prepared condiments that are truly keto-friendly so if you're willing to take just a few minutes; this one is easy, quick, delicious, with no need to worry about sugars or fillers.
6 oz. tomato paste (no sugar added)
2 cans of water
1 tsp apple cider vinegar, with the mother (Omit or reduce amount if you don't like your sauce so tangy)
1/2 cup golden brown sweetener (I used Lakanto's, Swerve and Sukrin also make a brown sugar version as well)
1/2 cup finely diced onion
2 garlic cloves, minced
2 tsp chipotle paste (I like this one)
2 tsp liquid smoke
salt & pepper
4 Tbsp butter or olive oil (Omit or reduce amount if you are aiming for higher protein, more moderate fat macros)
Put all ingredients except the fat into a saucepan and simmer together til the onions and garlic are soft and the sauce is beginning to thicken. Use an immersion blender to blend the sauce into a smooth mixture. Add the butter or olive oil, it will give the sauce more body and richness and will up the fat content as well.
We used this as a sauce for the burgers tonight. Tomorrow night we're grilling pork chops and this will be great for those. I also love love love ranch dressing with a bit of BBQ sauce, so that's on tap over the next few days too!
