Reuben Casserole Bake

 


I have always loved Reuben’s.  I remember my mama making them for us when we were growing up and they were always a special favorite.  So let’s make a keto version 🙂

Commercially prepared thousand island dressing is definitely not a keto option.  So it’s time to make up a batch keto-style.  You can find the instructions for making mayo and thousand island dressing here.  If you really don’t want to make your own mayo, Primal Kitchen makes a keto-friendly mayo with avocado oil that could be used in place of homemade.  Making the dressing may seem like work, but it really doesn’t take long and it’s so worth it!

 

 

I used this jar of Bubbie’s sauerkraut–ingredients cabbage, salt, & vinegar; a pound of thin-sliced Boar’s Head corned beef; and a pound of swiss cheese.  Grate the cheese.  Layer sauerkraut, corned beef, and swiss cheese in an 8 x 8 pan in three layers.  Heat in the oven til heated through and cheese is melted.  Top with the thousand island dressing.  Eat.  Enjoy.  And wonder why on earth we ever thought we needed bread!
