I often make these quick easy cookies when the grandchildren are coming over. They turn out thin and crispy and we all love them! One recipe makes twelve smaller sized thin cookies, so double it if you’re having more people over.
You can also melt the chocolate chips and make them as chocolate cookies, which our Betsy really likes
1/4 cup butter.
1/3 cup Swerve
1/4 cup almond flour
1/4 tsp xantham gum
6 Tblsp shredded unsweetened dried coconut
1/2 tsp vanilla
1/4 cup lilly’s chocolate chips, sugar free sweetened with stevia
Bake on parchment paper at 350 til the edges are golden. After the first minute or two in the oven, I flatten them sightly with a spatula to make sure they’ll be thinner. Watch them closely because they will burn quickly! They usually take about 8-10 minutes in our oven. I hope you enjoy
