Keto Fish Fry

Mark fried up these beautiful catfish fillets the other day. He dipped the filets in egg, dredged them in crushed pork rinds, and fried them in lard. He used some chalula for extra heat. It’s our go-to hot sauce.

Merry Thanksgiving

Oh, who am I kidding? It was a bittersweet Thanksgiving. But still, we made it as merry as we could, and there were many moments of joy in between the family spat and the intermittent self-critical thought of “doing too much” and trying to make it all perfect. Whew! But we made it through and it really was lovely. This was our fifth Thanksgiving eating keto and as usual, our plates were full. Turkey, keto dressing, caulimash, green beans, broccoli, Rachel brought her deviled eggs, my dear friend Cathy brought the pickles for us, biscuits, some salad with homemade ranch dressing. It was a lot of cooking, a lot of food and the fridge is now stuffed with leftovers! This was my first attempt at making keto dressing. Chicken Noodle Soup

It's been a few years since I've had chicken noodle soup! The noodles are Egg Life Wraps cut into thin strips. The noodles will float so I did not add them to the pot of soup. The soup was an easy instant pot dish. I bought a package of chicken thighs ($4 for a pack of 8! That's only fifty cents each) Pressured the thighs in about a cup of chicken broth. I took them out of the pan and put the remaining broth on saute, added about a cup of celery and one medium onion chopped, salt and pepper. As I deboned the thighs, the celery and onion cooked and softened. Returned the chicken to the vegetables and added more chicken broth. I probably used a whole 32 ounce box of chicken broth and another pint of homemade chicken broth that was in the fridge.
